Ingredients 食材
- 400 g broccoli, about one large head
- 4 cloves garlic, thinly sliced
- 1 tbsp light soy, 1 tbsp oyster sauce, 3 tbsp water
- 1 tsp cornflour, 1 tsp sesame oil
What to buy
Broccoli crowns or whole heads. Choose tight, dark-green florets with no yellowing. Oyster sauce is labelled oyster flavored sauce; vegetarian versions are usually labelled vegetarian oyster sauce and work fine.
Method 做法
- 1Cut the broccoli into bite-size florets and peel the stem before cutting it into thin batons. The stem is the sweetest part and deserves to be on the plate.
- 2Bring a pot of well-salted water to a boil, add the broccoli, and cook for ninety seconds. Drain and spread it out so it stops steaming.
- 3Mix the soy, oyster sauce, water and cornflour in a small bowl. This is the whole sauce; there is no seasoning to do later.
- 4Heat a wide pan over medium heat with a tablespoon of oil. Add the garlic and cook slowly until it turns pale gold, not brown.
- 5Turn the heat to high, add the drained broccoli, and toss for one minute. Pour the sauce around the edge of the pan and toss until it coats the florets, about thirty seconds.
- 6Turn off the heat, add the sesame oil, and serve immediately while the stems still have a snap.
Broccoli is the vegetable that most often gets boiled into submission, which is a shame, because it is one of the few greens that can hold its own against a plate of rice and a rich main. The Chinese takeaway treatment — garlic, soy, a glossy sauce — is not a compromise. It is the best thing you can do to a head of broccoli in under ten minutes.
The method has two moves. Blanch it in salted water to set the colour and start the cooking. Then finish it hard in a hot pan with garlic and sauce, so the florets pick up a little char at the edges while the stems stay crunchy. Do one without the other and you get either raw-tasting broccoli or a grey, limp pile.
Why blanch first
Blanching does three jobs at once. Salt in the water seasons the broccoli from the outside. The brief boil sets the bright green colour and drives off the raw, sulphuric edge. And it partially cooks the thick stems, so the pan has time to brown the florets without overcooking them.
Ninety seconds is the number. A minute is fine if the florets are small; two minutes is already too long. Pull them out while they still taste slightly underdone, because they will keep cooking in the pan and on the plate.
The next step matters as much as the blanching: spread the drained broccoli out on a plate or tray. If you leave it piled in a colander or covered in a pot, the residual steam softens it from the inside. You want the surface dry before it hits the oil, or it will steam rather than fry.
The garlic question
Garlic burns in a hot pan in about fifteen seconds. The fix is not to stir faster; it is to start the garlic in a cooler pan and sliced rather than minced. Slices brown more slowly and give you a clear visual cue. When they are pale gold, add the broccoli and turn the heat up.
If you like a stronger garlic hit, add a second batch of raw minced garlic at the very end, off the heat. The residual warmth takes the raw edge off without cooking it into bitterness.
The sauce is a ratio
One tablespoon of light soy, one of oyster sauce, three of water, and a teaspoon of cornflour. That is enough for a large head of broccoli. The cornflour is what turns the liquid into a glaze that clings to the florets instead of pooling at the bottom of the plate.
Mix the sauce before you turn on the heat. Stir-frying moves too fast for measuring, and any sauce with cornflour in it must be stirred again just before it goes in, because the starch settles.
What to serve with it
This is a side, but it is a side that can carry a meal. Serve it with rice and a fried egg, with cola chicken wings, or with anything braised and dark. It also works cold the next day, tossed with a little more sesame oil and vinegar, though the stems will have lost their snap.
If you are cooking for one, use half a head and halve the sauce. A single portion in a large pan is actually easier than a double batch: the broccoli has room to touch the hot surface instead of piling up and steaming.
Questions
Can I use frozen broccoli?
Yes. Cook it straight from frozen without blanching, but expect a softer texture. Add an extra minute in the pan and do not thaw it first, or it will turn to mush.
Why does my garlic burn before the broccoli is ready?
The pan is too hot when the garlic goes in, or the garlic is minced rather than sliced. Sliced garlic on medium heat turns golden slowly; minced garlic in hot oil scorches in seconds.
How do I keep the broccoli bright green?
Salt the blanching water, cook for no more than ninety seconds, and drain well. Overcooking and leaving it in a covered pot are what turn it olive and soft.
