Smashed Cucumber Salad: 10 Minutes, No Cooking

Ingredients 食材

  • 2 long cucumbers, about 400 g
  • 3 cloves garlic, finely grated
  • 1.5 tbsp black vinegar, 1 tbsp light soy, 1 tsp sugar
  • 1 tsp sesame oil, 1 tsp chilli oil, 1 tsp sesame seeds

What to buy

Persian or English cucumbers. Persian cucumbers have thinner skin and fewer seeds, so they need no peeling. Chinkiang vinegar is labelled Chinkiang vinegar or Chinese black vinegar in the Asian aisle; balsamic is too sweet to substitute one-for-one.

Method 做法

  1. 1Lay a cucumber on the board and press the flat side of a chef's knife down on it until it splits. Do this along its length, then break it into bite-size pieces with your hands.
  2. 2Put the pieces in a bowl, sprinkle with a pinch of salt, and leave for five minutes. The salt pulls out water that would otherwise dilute the dressing.
  3. 3Drain the bowl and discard the liquid. Do not rinse the cucumber; the salt on the surface is part of the seasoning.
  4. 4Whisk the garlic, black vinegar, soy, sugar, sesame oil and chilli oil in a small bowl until the sugar dissolves.
  5. 5Toss the cucumber with the dressing and let it sit for five minutes. It should look glossy, not swimming.
  6. 6Scatter the sesame seeds and a few coriander leaves over the top and serve.

Smashed cucumber is not really a recipe. It is a technique for making cucumbers taste like more than cucumbers, and it takes about as long as boiling water. In China it is a standard cold dish, the thing that arrives before the meat and disappears before the meat arrives.

The reason it works is physics. A knife slice gives you a smooth, sealed surface; dressing slides off it. A smash fractures the cucumber along its cell walls, creating rough faces and deep cracks that hold sauce. You are not just making different shapes. You are making a surface that can absorb.

The salt step is not optional

Cucumbers are mostly water, and that water wants to join the dressing. Salt them for five minutes first and you draw out a surprising amount of liquid. Pour it off, and the dressing stays concentrated instead of turning into cucumber water.

Five minutes is enough. Much longer and the cucumber turns limp and pickled, which is a different dish. If you are in a hurry, salt them first, then make the dressing while they sit.

The dressing is a balance of four things

Salt from the soy, sourness from the black vinegar, sweetness from the sugar, and fat from the sesame and chilli oils. The garlic is there to make it smell like a restaurant. Get those four in balance and the exact quantities matter less than you think.

Black vinegar — Chinkiang vinegar, if you have it — is the standard. It is malty, slightly sweet and less sharp than rice vinegar. Rice vinegar works, but add a pinch more sugar. Balsamic is too sweet and too grapey, though a small amount mixed with rice vinegar can stand in.

Chilli oil is optional but recommended. It adds a warm, aromatic heat rather than a raw burn. If you do not have it, a pinch of chilli flakes warmed briefly in the sesame oil will do.

Smashing without a mess

Use the flat side of a chef’s knife, press down with the heel of your hand, and let the cucumber split. If you are nervous about the knife, put the cucumber in a zip-lock bag and hit it with the bottom of a pan. The bag also contains the seeds and juice, which makes cleanup easier.

Break the pieces by hand rather than cutting them after smashing. The jagged edges are the point, and the hand-sized pieces give you a better sense of how big they should be.

What to serve with it

This is the antidote to anything rich: braised pork, fried chicken, a bowl of mapo tofu, a plate of dumplings. It also works as a standalone lunch with cold noodles and a boiled egg.

For a more substantial version, add shredded cooked chicken, crushed peanuts or a spoonful of sesame paste. The sesame paste version needs a little more vinegar to cut through the richness. Both are good, and neither takes more than five extra minutes.

Leftovers

There should not be many. If there are, eat them within a day. The cucumber will have released more water and softened, but the flavour will actually be better after an hour in the fridge. Just pour off the liquid before serving.

Questions

Why smash the cucumber instead of slicing it?

Smashing creates rough, porous surfaces that grip dressing, while a clean slice stays smooth and lets it slide off. The irregular pieces also hold different amounts of sauce, which makes the salad more interesting to eat.

Can I make this ahead of time?

Make the dressing ahead and keep it in the fridge, but dress the cucumber no more than fifteen minutes before serving. Beyond an hour it releases water and the salad turns watery.

I do not have black vinegar. What else works?

Mix rice vinegar with a little balsamic, or use rice vinegar alone with an extra pinch of sugar. The result will be brighter and less malty, but still good.
