Most rib recipes assume you own a wok, a stove that reaches restaurant heat, and the patience to stand over both. This one assumes you own an air fryer, a supermarket that sells pre-cut spareribs, and approximately 2 minutes of willingness. Everything else — the crisping, the garlic perfume, the lacquered surface — the machine does while you do nothing.
Why this is the laziest rib recipe that still works
Ribs are usually a slow-food ingredient: long braises, overnight marinades, ovens held at low heat for hours. The trick here is cutting them small. A 2-inch segment has enough surface area to render and caramelize in the time a whole rack would need just to warm through, and enough bone to keep the meat next to it juicy. Small pieces are also why the air fryer wins: its fan drives hot air across every face of every piece at once, which is exactly the job a deep-fryer does, minus a litre of oil and the cleanup.
The second trick is doing nothing that creates a dish. No cutting board because the butcher cuts. No marinade bowl left to soak because the tossing bowl is the serving bowl. No tray to scrub because the basket liner is paper and goes in the bin. Count the sinks involved: one bowl, one spoon.
Ingredients, and what to actually buy
- Pork Spareribs, cut into 2-inch pieces
- Minced Garlic (a lot of it)大量蒜蓉
- Light Soy Sauce生抽
The label that matters is Pork Spareribs / St. Louis Style Ribs.In a Western supermarket, look for the label Pork Spareribs or St. Louis Style Ribs. Baby Back Ribs are leaner and cook noticeably faster, so the timing in this recipe will not match them. Lazy trick: ask the butcher to cut the rack into 2-inch pieces for you. At home you just rinse the pieces under cold water and drop them straight into the basket — no cutting board to scrub afterwards.
The method, start to finish
- 1Rinse the rib pieces under cold water and pat them roughly dry with paper towel. No cutting board, no knife: the butcher already did the only hard part.
- 2Throw the ribs into a bowl with the minced garlic and a splash of light soy sauce. Toss with a spoon until every piece is coated. This bowl is the only dish you will wash.
- 3Load the pieces into the air fryer basket in a single layer, bone ends pointing whichever way they fit. Overlapping pieces steam instead of crisp.
- 4Set the air fryer to 190°C and 18 minutes. No preheating: the ramp-up is already counted in that time.
- 5At the halfway mark, pull the basket out and shake it once so the pieces swap top and bottom. Fifteen seconds, tongs optional.
- 6When the timer ends, the surface should be glossy and caramelized with crisped garlic flecks. Rest two minutes, then eat straight from the basket liner if you are feeling truly lazy.
Heat control: the only number that matters
Set the air fryer to 190°C for 18 minutes and leave it alone. That pairing is not arbitrary. Minced garlic sits on the surface of the meat, exposed to the full force of the heating element, and garlic sugars scorch quickly once you push past the fryer's upper range — which is why every attempt at “hotter means crispier” ends in bitter black flecks. Below the target, the opposite failure: the surface never gets hot enough to brown, so you get pale, wet, safely-cooked-but-sad ribs, and no extra minutes will fix the colour. A couple of degrees of slack either side is fine; a different philosophy is not.
Why the rice cooker can never make this dish
It is tempting to dump everything in the rice cooker and press a button. Do not. A rice cooker is a boiling-water machine: it holds at about 100°C and physically cannot exceed it while water is present. Browning — the Maillard reaction that makes ribs taste like ribs — needs dry heat well above that. In a rice cooker your garlic dissolves into steam and your ribs emerge pale and soft: technically edible, emotionally defeating. The simulator on this page lets you make that mistake safely, as many times as you like.
If it goes wrong: reading the three failure modes
Every bad plate of these ribs looks like exactly one of three things, and each one names its own cause. Pale and wet means the surface never crossed the browning threshold: the dial was too low, or the basket was crowded enough that the pieces steamed in each other's moisture. Black flecks and a bitter edgemeans the garlic outran the meat: too hot, or too long, or garlic mounded on one face instead of tossed through. Dry and leathery with good colour is the rarer third case — correct heat, excessive time, usually because someone walked away to a lecture and trusted the timer app on a phone left in another room.
The simulator on this page reproduces all three, plus the two that come from the wrong pot and the missing seasoning. Five minutes of failing in it costs nothing; five minutes of failing with real spareribs costs a dinner and a smoke alarm conversation with your neighbours.
Meal-prep: cook once, eat twice
These ribs keep well, which makes them a legitimate Sunday cook-once situation. Cool them uncovered for twenty minutes, then box them for up to three days in the fridge. Reheat in the air fryer for a few minutes until the surface sizzles again; the crust comes back almost entirely. What you must not do is microwave them: steam re-softens every crisp edge you paid for, and the garlic turns mealy. If your kitchen has no air fryer on reheat-day, a very hot dry pan, ribs in a single layer, thirty seconds a side, recovers most of it.
The marinade-less method also means there is nothing left over to store: no half-used sauce jar colonising the fridge door. The only residue is the paper liner, and the only decision left is whether tonight's rice is worth starting now or tomorrow.
Equipment notes, because baskets differ
Air fryers are not calibrated alike, and basket geometry changes airflow. A small round basket holding six pieces in one layer behaves as described here. A large drawer-style basket holding twelve pieces does not: the middle pieces sit in a pocket of stagnant steam and finish later than the edges. If you cook a double batch, shake at the halfway mark twice instead of once, and expect a couple of extra minutes. Basket liners with perforations are fine; solid liners trap fat and slow the crisping noticeably, so if yours are solid, skip them and accept one rinse of the basket.
Questions people actually ask
Can I use Baby Back Ribs instead?
You can, but they are leaner and thinner, so they finish earlier and dry out faster. If that is all your store carries, shave a few minutes off and check early. Spareribs are the forgiving cut for this method.
My garlic keeps burning before the meat is done. Why?
Almost always the dial is above the target, or the garlic is piled on one face instead of tossed through. Coat, do not cap: garlic distributed in a thin layer browns with the meat; garlic mounded on top burns alone.
Can I make a batch and reheat it?
Yes. Fridge for up to three days, then back in the air fryer for a few minutes to re-crisp. The microwave will make the crust soft again, which undoes the entire point of the recipe.
