One-Pot Soy Sauce Chicken Rice (Rice Cooker Friendly)

Ingredients 食材

  • 400 g boneless chicken thighs, cut into bite-size pieces
  • 1.5 cups jasmine rice, about 270 g
  • 4 shiitake mushrooms, fresh or rehydrated
  • 2 tbsp light soy, 1 tsp dark soy, 1 tbsp oyster sauce
  • 3 slices ginger, 2 cloves garlic, 1 tsp sesame oil

What to buy

Boneless skinless chicken thighs. Look for boneless skinless chicken thighs; they stay juicy through the rice-cooker cycle in a way breast does not. Use jasmine rice rather than arborio or sushi rice, which turn sticky.

Method 做法

  1. 1Mix the chicken with the soy sauces, oyster sauce, ginger, garlic and sesame oil. Leave it for ten minutes while you rinse the rice.
  2. 2Rinse the rice until the water runs mostly clear, then put it in the rice cooker with 1.6 cups of water. Use slightly less than your usual ratio because the chicken will release juice.
  3. 3Scatter the chopped mushrooms over the rice, then arrange the chicken pieces on top in a single layer. Do not stir them into the rice.
  4. 4Close the lid and run the normal rice cycle. Do not open it while it cooks; the steam is doing the work.
  5. 5When the cycle ends, leave it on keep-warm for ten minutes. Then open, fluff the rice gently with a paddle, and scatter the scallions over the top.
  6. 6Spoon into bowls, making sure each portion gets chicken, mushroom and some of the dark sauce from the bottom.

This is the dish to make on the night you have a problem set due at midnight and a kitchen the size of a wardrobe. It requires one pot, one knife, and about ten minutes of actual attention. The rice cooker does the rest while you do something else, which is the entire promise of this site.

The logic is simple: rice absorbs water and steam, chicken releases fat and juice, mushrooms add savoury depth. Put them together in the right order and you get a complete dinner with a sauce built in. Put them together in the wrong order and you get gluey rice with dry chicken. The order is the recipe.

Do not stir the chicken into the rice

This is the most common mistake. Stirring raw chicken through the rice compacts the grains, distributes the marinade unevenly, and makes the bottom layer cook faster than the top. Instead, put the rice down first, scatter the mushrooms, and lay the chicken on top in a single layer.

The steam rises through the chicken and drips its seasoned juices down into the rice. That is the sauce. If the chicken is buried, the juices end up in the wrong place and the rice turns soggy.

The water ratio

Most rice cooks at a one-to-one ratio by volume, plus a little. This recipe uses 1.6 cups of water for 1.5 cups of rice, which is deliberately short. The chicken, the mushrooms and the marinade will release more liquid during the cycle, and rice cookers do not know the difference between water you added and water that arrived late.

If your cooker runs wet, start with 1.5 cups. If it runs dry, use 1.75. The first time you make this, check the texture at the end and adjust; after that, you will know your machine.

The marinade does the seasoning

There is no separate sauce to make at the end. Light soy brings salt, dark soy brings colour, oyster sauce brings sweetness and body, and sesame oil brings aroma. Ginger and garlic go in raw and mellow during the cook.

Do not add extra salt. The rice absorbs the marinade, and what tastes right on raw chicken will taste too strong once the water is gone. If the finished dish needs more, add a splash of soy at the table rather than in the pot.

Variations that actually work

A sliced Chinese sausage laid on top with the chicken adds sweetness and fat, and turns the dish into a proper Hong Kong-style clay-pot rice. Frozen corn and peas can go in during the last ten minutes of keep-warm, but do not add them at the start or they turn to mush. A fried egg on each portion is never wrong.

For a vegetarian version, replace the chicken with firm tofu and extra mushrooms, and add a tablespoon of soy to the water. The tofu will not release the same juices, so use the full 1.75 cups of water.

Leftovers and reheating

This keeps well for two days in the fridge. Reheat it in a covered pan with a splash of water over low heat, or in the microwave with a damp paper towel over the bowl. The rice will never be as good as the first night, but the flavour survives.

The crispy bottom layer, if your cooker makes one, is the best part. Do not scrape it out and throw it away; serve it on top, where it stays crisp against the soft rice.

Questions

Can I use chicken breast instead?

Yes, but thighs are better here. Breast releases little fat and dries out over a long rice-cooker cycle. If you only have breast, cut it into larger pieces and add it on top of the rice rather than stirring it in.

The rice came out too wet. What should I change?

Reduce the water by two tablespoons next time. Chicken releases a surprising amount of liquid, and marinade counts too. The rice should look just dry at the edges when the cycle ends.

I do not have a rice cooker. Can I make this in a pot?

Yes. Bring everything to a boil in a heavy pot, cover, turn the heat to the lowest setting, and cook for fifteen minutes. Rest off the heat for ten minutes without lifting the lid.
